simple, quick dish of cannellini beans braised in a sweet cherry tomato sauce

Tomato season is slowly falling upon us and I am thrilled. This was a very simple, quick dish of cannellini beans braised in a sweet cherry tomato sauce. Cutting the tomatoes in half really speeds up the time it takes them to break down in the pan. This was just delicious mopped up with good crusty bread.

Ingredients:
2 punnets of cherry tomatoes, I used yellow and red
1/2 a red onion
4 cloves of garlic
2 tins of cannellini beans
Basil

Optional:
Pine nuts
Soft (vegan) cheese like ricotta, stracciatella, mozarella

Method:
Dice the onion and slice the garlic. Halve the tomatoes. Heat oil in a large pan and fry off the onion for 5 minutes. Add the garlic and as soon as it starts to colour add the tomatoes. Once they start to break down add just a little splash of water to keep it juicy. When they are nice and saucy get a stick blender and blend until roughly smooth. Drain the cannellini beans and add them in. Simmer for a couple minutes and then serve with lashings of olive oil, basil and pine nuts and cheese if using. Serve hot with good crusty bread!.
